CU school of Engineering is very good. You can also go local, Denver that is, and go to Metro or UCD campus Downtown.

The bulk of engineering side people here are from CU-Boulder, CU-Denver (my alma mater), CSU, CS-Springs, Metro and School of Mines. A few random from out of state, Iowa, Iowa State, S. Dakota Mines, etc.
About all I can say is look for accreditation and certificates if you want paper. I'm all about offering past work and portfolios, but I recognize that's only if you get your foot in the door. What sort of CAD examples can you offer an interviewer?
Autodesk Authorized Training Centers - Colorado (http://www.autodesk.com/cgi-bin/dblookup.pl?COUNTRY=US&dbname=usatc&OP=dbquery&STATE=CO&PRETYPE=)
Spatial (http://www.spatial.com/), a well-known 3D CAD software company is local. You might look to see if they offer any classes or accreditation. They also might have a forum where you can talk with other users and find out about job opportunities.
