so...we want to put a hitch on the Sienna - is this a Toyota dealer thing or should we just look for a local Uhaul or something similar to install this?

All Toyota hitches are inexpensive on Amazon but realize that some won't fit all that well (you will need to egg out some holes) and some have horrid corrosion protection.

That said, you'll pay 2X or more for a gen. Toyota hitch and it's typically US-made with better corrosion protection (according to my dealer buddies). I like the Toyota brand hitches, but not when they are $375 and you can get brand X for $225.

There is also a Trailer Source out in Erie near I25 and Hwy 7 (Baseline).

But honestly it should be pretty simple to install yourself. Most cars have the frame pre-drilled and tapped, so it's just a matter of lifting the hitch up to the frame and bolting it down. And if you need power, there's usually a wiring harness hidden somewhere in the back of the car near the spare tire. Just fish the wires through an existing grommet and plug her in. The hitch supplier will likely have some detailed instructions, or you can find the hottest Sienna forum on the 'net and find the info there.

FWIW, I bought a U-Haul hitch years ago and it was a nice hitch that bolted into the factory spots, it was vehicle specific and less than $200 installed (probably 10 years ago now).
