I wonder what the power is like with the Toyota V8, I have never driven one.

Is there anybody on here that can give me a comparison to the older FJ80 straight six that has driven both?

There is more seat of the pants power with the V8 for sure, but IMHO they made the V8 way under powered for the platform. Too me it feels sluggish for the displacement.

I would rather the V8 over the 6 but it isn't as big of an improvement as you might first think.

The I6 feels sluggish compared to the V8. It's not gobs of power that merican's are used to but it's a nice healthy increase. I can go up the mtns with towing where the 80 would be going 25-or 35. It's a solid motor. Having both i'd rather have the v8 which is hard for me to say because I'm an old skool land cruiser lover and the straight 6 has always made the cruiser legendary.

there are quite a few people that have had an 80 and moved to 100

What a huge difference the extra transmission gear makes in the '03 and later trucks. The engine is always ready to rev and is far from sluggish, even with the truck's interior heavily loaded with rack and tent on top. Of course, an extra gear behind the I6 would be a boon too.

If you want to go look at it (the mini) let me know, I used to work on them and restored one from the ground up concours style.
