I don't buy meat going bad that quick either. Get the guts out and letting it sit overnight sounds fine at 20 degree overnight. Its not like separating the quarters will make that much difference IMO. My quarters were still warm when we got back to the house. This was about 10 hours after the kill. I hung them in the garage for the night. Overnight low around 38. Then washed off the dirt in the morning and placed them in my neighbors beer fridge for a few days before processing to age. I ate pieces raw when cutting them up. Did not get sick.

That is the point. He did not gut it. The guts retain a LOT of heat. I'm sure it will be fine, but in practice, it is not a good idea.

As for meat spoiling, that is dependant on a lot of factors. I have never had "cold" quarters while packing them out, but that is because they too retain heat. That is even when packing out at night at -5 F.

I'm sure Sno-Bored's buddies meat is fine, he got lucky. As I said, in principle, he should have gotten the guts out first.

My understanding is that he did gut after kill and then left it for the night.

I found that now after getting to the last page in the thread. I gave up on the BS too soon.
